How to Brew Guide

Make Arabic coffee with extra-fine Turkish grind in a rakweh, also called a cezve or ibrik. This stovetop recipe makes two small cups; use half the quantities for one.

You’ll need a small rakweh, a digital scale, a spoon and two coffee cups. Use a pot with space above the waterline for the foam to rise.

  1. Measure the coffee

    Weigh 14 g of extra-fine coffee into the pot. For one cup, use 7 g coffee and 70 ml water. A scale gives more consistent results than a heaped spoon.

  2. Add water and sugar

    Pour in 140 ml room-temperature filtered water. Add sugar now if you like it sweet, then stir until no dry clumps remain.

  3. Heat gently

    Place over medium-low heat without further stirring. Aim for about 2–2½ minutes on the stove, adjusting the heat for your pot and burner.

  4. Watch for the first rise

    As the foam lifts toward the rim, remove the pot from the heat before a rolling boil. Watch the coffee rather than relying on the timer; don’t keep boiling it.

  5. Pour slowly

    Gently divide the coffee between the cups, pouring a little into each in turn. This method is unfiltered, so some fine grounds will go into the cup.

  6. Let the grounds settle

    Wait 2–3 minutes before drinking. Sip gently without stirring, leaving the layer of sediment at the bottom. Serve with water and something sweet if you like.

Use this 1:10 coffee-to-water ratio as a starting point and adjust to taste. For an electric Turkish coffee maker, follow its instructions and capacity limits.

About Qahwa and Turkish grind

What does “Turkish grind” mean?

Turkish grind is an extra-fine, powder-like coffee grind used for brewing directly in a small pot. It describes the grind and brewing method, not the origin of the beans. Both Falasteeni blends come in this grind.

Which blend should I choose?

Choose Original for bold Arabic coffee with dark chocolate notes and an earthy finish. Choose Cardamom for the same Falasteeni Blend with fragrant spice. Both come in 12 oz bags, ground extra fine for qahwa.

Do I need a special coffee maker?

A rakweh or cezve is the traditional small pot used for this method. The extra-fine grind is intended for qahwa preparation, rather than a standard drip coffee maker.

Is qahwa the same throughout the Arab world?

Arabic coffee traditions vary by region and family. Falasteeni is our Palestinian-style qahwa, made with light- and dark-roasted coffee and an extra-fine grind.

Why are there grounds in the cup?

This style of Arabic coffee is brewed without a filter, so fine grounds settle at the bottom. Wait 2–3 minutes after pouring, sip gently and leave the sediment in the cup.
